I'm really excited about 2016! I have some great ideas for this site and I can't wait to grow and get to know my readers more. How was your New Years? I'd love to hear some of your goals! My New Years was very low key and ... I'm OK with that! I stayed home with my family and watched Star Wars! Hahah It was a nice relaxing evening! I can't think of a better group of people to ring in the New Year with! Hahah

One of my goals for the next 90 days is to lose 15 pounds. I am on the upper side of my healthy weight range and I would rather be in the middle! Hahah ... that gives me wiggle room and I like the "lean" look! So in order to lose 15 lbs, I need to ensure that I am meal prepping. PREPARATION is truly one of the main keys to SUCCESSFUL WEIGHT LOSS!

In an effort to meal prep, I came up with these DELICIOUS, HEALTHY, FREEZER READY - TASTY BREAKFAST BURRITOS. These are simple to make, assemble and freeze. After I made a batch of 12, I wrapped each one in plastic wrap, placed them in a gallon freezer bag and threw them in the freezer. I grabbed one before heading out the door today for work, put it in the microwave for 1:45 and enjoyed a warm, savory, healthy breakfast. That is truly one of the best ways to start a healthy day on plan! Below is the recipe, enjoy!

TASTY BREAKFAST BURRITOS

Servings: 12

Ingredients:

18 Large Eggs

6 TBSP Fat Free Milk

3/4 Tsp Salt

3/4 Tsp Black Pepper

6 Cups Raw Spinach

1 Container Sun Dried Tomatoes packed in Oil (Drained) (My container was approx 8 oz)

8 oz Fat Free Cream Cheese

12 Whole What Tortillas (I used Ole's Extreme Wellness)

Directions:

  1. Spray a large skillet with cooking spray.
  2. Place Eggs, Milk, Salt  & Pepper in skillet and stir over Medium until eggs are almost set.
  3. Add Spinach and Sun Dried Tomatoes to skillet. Continue to stir until spinach has wilted. Reduce heat to med-low.
  4. Add Cream Cheese and stir until well combined.
  5. Place approx 1/2 C mixture into each tortilla. Either serve and enjoy or wrap burrito, place in plastic wrap and throw in freezer for later!
