Pumpkin-Nog Pancakes


Hey LovinLosin Fam!

Are any of you sick of pumpkin? HECK NO! Hahah, how is that even possible!? I love this time of year and I do my best to make sure I get my fair share of pumpkin in during the holidays!

My mom came by the other day and requested pumpkin pancakes. (Yeah, you read that right - my mom requested. She doesn't cook a whole lot, so it's up to me to make sure she is properly fed! Hahah) At the time, I didn't have the ingredients on hand but I thought to myself - that sounds delicious, add that to my to-do list!

So, here we are!

Did you read the title of this recipe and think ... pumpkin-nog?? She must mean eggnog. Nope, pumpkin-nog people! It exists! I found it at Smiths or Kroger is you live outside of Utah 🙂

Sure, you can substitute egg nog in this recipe, but give pumpkin-nog a try and let me know what you think.

Pumpkin-Nog Pancakes

Servings: 14 - 2 pancakes per serving


4 C Whole Wheat Flour

2 TBSP Baking Powder20151213_101128

1 TSP Salt

2 TBSP Pumpkin Pie Spice

4 TSP Sugar

4 C Pumpkin-Nog

4 Eggs

4 TBSP Water

4 TSP Vanilla Extract


Mix all ingredient together. Preheat griddle. Spray griddle with nonstick cooking spray. Using a 1/4 C measuring cup, scoop and place on preheated griddle. Once bubbles appear and edges begin to set, flip.

I made a large batch - 28 pancakes, so that I could freeze and use them throughout the week.

My kids loved these pancakes but I did top theirs with something sweeter .... I mixed 1 C Powdered Sugar with 10 TSP of the Pumpkin-Nog and placed that on top of their pancakes!

For me, I just topped with SF syrup 🙂
