Meal Prep Ham & Cheese Omelette

Do you ever feel guilty because of all the time you put into your food prep and then you swolemate goes to work empty handed while you're eating a DELICIOUS macro-friendly meal!? I DO!!

Haha, My poor hubby ... he actually usually goes without breakfast like every day. I'm over here eating like a Queen and he is starving! So ... with a certain LOVE holiday approaching ... I decided that a simple nice gesture would be to amp up my normal meal prep to include the love of my life!

Hence ... My new series of His & Hers Meal Prep!

I am super excited about this but more excited that my hubby will actually have some food! Heheh

Meal Prep can be easy for the seasoned or terribly hard and overwhelming for the newbies .. My goal is to keep everything as SIMPLE as Possible.

It's obvious that my hubbys nutritional needs are going to be different from mine, so very often, I will find ways to use the same recipe and/or same ingredients and bulk it up. I do sometimes find myself drooling over all of the carbs that he will get versus mine! Heheh

For this series, I will only be including nutritional information for the HER side, however, if I get enough requests, I will add it for the HIS!

So, finally here is the RECIPE!

Note: First make sure you have a LARGE muffin pan or you will end up with more small muffins than the picture. Not a big deal just creates a little more work. If you want to purchase the one I've used, the Amazon link is below. The recipe will make 1 so if you are meal prepping and you want to make multiple, place the same amount of ingredients in the next muffin spot, so on and so forth. For the HIS side, I will share the ingredients I used. For mine, I did 2 muffins and used the other 4 to make HIS 🙂



184g Egg Beaters (If you need more fat for the day, substitute real eggs)

28g Green Bell Pepper

2 Slices Oscar Meyer Honey Baked Ham 97% Fat Free

7g Sargento Extra Sharp Cheddar Cheese

1/2 Kroger Sourdough English Muffin (If you need lower carbs for the day, you can either skip the English Muffin or try Ezekiel's - Amazon link below)

Salt & Pepper to taste

Preheat oven to 350 degrees. Spray muffin tin with nonstick spray. Weigh out all ingredients listed above. Place Green Bell Pepper in microwaveable dish and cook for 1 minute. Take out and use a paper towel to blot excess moisture. Combine all ingredients together with the exception of the Ham and English Muffin.

Place the 2 slices of ham into the muffin cups.

Now top with egg mixture.

Place in oven for 30-35 minutes. You can check to see if they are done by using a toothpick. Once they have risen and browned a little and you have done the toothpick test, take out of oven.

Now, place your English Muffin in the toaster. Once done, take English Muffin out and place a Ham & Cheese Omelette on top like so ...

Calories: 239 Fat: 4 Carbs: 15 Protein: 29

For HIS:

Do everything the same except, use 2 whole eggs and 14g of cheddar cheese and he will eat his using an entire English Muffin (LUCKY!!)

For MEAL PREP: Complete assemble and wrap in Saran Wrap and then place in plastic ziplock bags and label and you are good for at least half the week on breakfast!
