Hummus Stuffed Pepper

Hi LovinLosin Fam,

Stuffed peppers are one of my faves even more so when they have one of my favorite ingredients/food - hummus! It is for sure a comfort food! I love the flavors that come together inside this recipe and plus how cool is it that the pepper serves as a little holder! It also seemed to be kid friendly as my 9 year old niece devoured it!


This is my mom's recipe and I just love it. After baking, the stuffing is so moist and I think that's because of the secret ingredient - hummus! The hummus adds extra protein and is yummy! This dish is easy to make and can be done on a weeknight. Keep in mind, it does need to bake for 45 minutes. The peppers can also be assembled ahead of time, frozen and baked later. Enjoy!

Stuffed Peppers

Makes: 6 servings


6 Green Peppers

1 lb 93% lean ground beef

1/3 C Chopped Onion

1/3 C Chopped Celery

3 C Cooked Rice

1 1/4 C Salsa - Divided

1/4 C Hummus

2 tsp Chili Powder

1/2 tsp Salt

1/2 tsp Pepper

4 oz Mexican Cheese Blend


  1. Cut tops off of peppers - discard and remove seeds. Place peppers in a pot and cover with water. Bring to a boil and let boil for 5 minutes.
  2. In a large skillet over medium heat, cook the beef, onion and celery until the beef is no longer pink. Drain. Stir in the rice, 1 cup of salsa, hummus, chili powder, salt and pepper.
  3. Grab a 9x13 glass dish and put in 1/4 C water in dish. Carefully take peppers out of pot, making sure there is no water inside and place inside the glass dish. Fill each pepper with the stuffing. Cover and bake at 350 for 45 minutes. Take out of oven, uncover and divide remaining salsa and cheese on each pepper and place back in the turned off oven until the cheese has melted.
  4. Take out of oven and enjoy!
