Easy Blueberry Protein Muffins



Here is a very easy basic recipe that is "amped up" with protein to ensure you stay full until lunch! They are also a great breakfast to meal prep as they freeze perfectly and are easy to grab from the freezer when heading out the door to work and will be thawed by the time you get to your desk and sit down with your coffee!


Easy Blueberry Protein Muffins

Servings: 12


1 box Betty Crockers Wild Blueberry Muffin Mix
92 g Egg Whites
2 scoops Vanilla Protein (I used Dymatize ISO-100 Vanilla)
14g I can't Believe It's Not Butter! Melted


Preheat oven to 425 degrees. Mix muffin mix excluding blueberries, egg whites, protein powder and melted butter until thoroughly mixed. Open and drain can of blueberries. Add blueberries to batter and stir gently. Place muffin liners in 12ct muffin tin. Spray muffin tin and liners with cooking spray. Using a 1/4 c measuring spoon, place 1/4c of batter into each muffin liner. Place in oven for 10-13 minutes. Muffins will be slightly brown on top.

Meal Prep: Let muffins cool and place 1 muffin into sandwich bag and place in freezer. Take one out every morning and either let defrost during morning commute or place directly into microwave for 25 seconds.

For His: Send your honey off to work with 2 of these bad boys. He can add butter if he pleases or if he wants to get crazy ... he can top with some peanut butter!!
