Creamy Chicken Pumpkin Pasta

Hey LovinLosin Fam,

I can't believe we are already here at Turkey Week! The pumpkin craze is just about over but I couldn't help myself with this dish. I LOVE pumpkin eeerrrrrrthaaanngg! So it only made sense to come up with a dinner recipe that includes pumpkin. This turned out really good! I was skeptical as I've never made anything hearty with pumpkin, just the sweet stuff. But it turned out great and my kids and hubby liked it! This could even be a side dish at Thanksgiving and you could take out the chicken.

Pumpkin Pasta

Creamy Chicken Pumpkin Pasta

Servings: 4

4 Boneless Skinless Chicken Breast - Sliced (4 oz breasts)

1 Clove Garlic - finely chopped

8 oz Dry Shell Pasta

1 C Canned Pumpkin

4 TBSP Fat Free Cream Cheese Spread

1/2 C Almond Milk

1 TBSP Dried Chives

1/4 tsp Ground Pepper

1/4 C Grated Parmesan Cheese - Divided


  1. Spray large skillet with olive oil spray. Place sliced chicken into skillet over medium high heat. Add chopped garlic. Stir until chicken is no longer pink.
  2. While Chicken is cooking, add water to a medium sized saucepan over medium high heat. Follow cooking directions on box.
  3. Once chicken is cooked, reduce heat to Medium. Add Canned Pumpkin, Cream Cheese Spread, Almond Milk, Dried Chives, Pepper and Parmesan cheese. Stir until combined. Reduce heat to low.
  4. Drain noodles and add to chicken mixtures. Stir to combine and top with remaining Parmesean Cheese.
