I hope all of you had an amazing "After Thanksgiving" week! Hopefully, you are all back on track with your healthy eating habits! If not, this post (8 Steps to Get Back on Track) is a great place to start 🙂

I have had a pretty crazy week, so much going on! I lost my wallet last Saturday but didn't realize until Monday 🙁 Fortunately there wasn't any fraudulent charges, so I'm thinking I must have just misplaced it. I did a little shopping that Black Friday weekend, so I may have stuck it in a shopping bag and maybe tossed that. Just my luck, that Monday was garbage day! Uggghhh And to boot, my husband went out of town, so I had to take his credit card and left him with nothing! Yikes!

On the positive side, I was literally in and out of the DMV in 5 minutes to replace my drivers license! I didn't even think that was possible!

Another positive piece of this week was that I prepped this amazing Blueberry Chia Pudding! This pudding is amazing as a pre-workout, post-workout, breakfast, snack and even dessert. This week, I treated it as a snack and looked forward to it each time. It's very versatile, so you can mix it up as much as you want.

So, why Chia seeds? They are loaded with amazing nutrients that are great for your body! They are a whole grain food and naturally gluten free. Plus, something really cool is that "chia" is an ancient Mayan word for Strength!

So take 5 minutes and make a batch of these to store in the fridge for the week ahead!


Blueberry Chia Pudding

Serves: 1


1 Tbsp Chia Seeds

1/3 C Unsweetened Almond Milk

1/8 tsp Vanilla Extract

1/8 tsp Lemon Extract

1 Packet Sweetener

1/2 C Frozen Blueberries


Combine all ingredients in a bowl, place in fridge for at least 3 hours, stir and enjoy! These can be left overnight and stored for up to 5 days in the fridge!
