Hi Lovin Losin Fam!

How was your holiday!? Mine was nothing short of amazing! Crazy busy, but amazing! Filled with food, family, presents, wrapping (lots of wrapping) ... did I say FOOD?! Hahah I am back on track now though. I couldn't wait until New Years to get back on the horse. I was feeling so yuck from all the sweets, treats and just over indulgence in general!

Prior to Christmas, I decided to try out a new muffin recipe. I LOVE muffins because they are delicious, healthy, portable and freezeable! These particular muffins are great for breakfast as they have no added sugars getting their mild sweetness from applesauce, bananas and berries and are made with whole wheat flour. These will set you up for an "on plan" day! You will not be sluggish around lunch time looking for carbs or something sweet due to a morning sugar high!

These will also keep you satisfied until lunch time. I have been eating 2 at breakfast for 8 SmartPoints and they are super filling and satisfying. Sometimes eating 8 SmartPoints at breakfast can seem like a lot especially if you are eating out at lunch or dinner, so you can opt for just 1 maybe with a 2SP yogurt for a 6SP breakfast! Have fun with these! Like I said, they freeze beautifully, so using this recipe, you will have 20 muffins for 10 servings of 2 each. So you can even save these for days when you know you will be eating a light lunch and dinner.

Berry Crumb Muffins

Servings: 20 Muffins

Muffin Ingredients:

3 Mashed Bananas

3/4 C Unsweetened Applesauce

1 2/3 TBSP Coconut Oil

1 2/3 C Frozen Mixed Berries

1 1/4 C Fat Free Milk

2 1/2 C Whole Wheat Flour

2 1/2 Tsp Baking Powder

1 2/3 Tsp Cinnamon

3/4 Tsp Nutmeg

3/4 Tsp Salt

Crumb Topping Ingredients:

3 1/3 TBSP Whole Wheat Flour

3/4 Tsp Cinnamon

1/2 C Rolled Oats

3 1/3 TBSP Coconut Oil


Preheat oven to 350 degrees.

Mix all muffin ingredients together until well blended.

Divide batter evenly between paper lined muffin tins.

In a separate bowl, combine crumb topping ingredients.

Place crumb topping evenly on top of muffins.

Bake for 20 minutes.

Let cool and enjoy!
